I finally had some time to sew and play on my sewing machine. I also made some crocheted dish cloths.

Happy Sunday,

Hope your week has gone well. My weended was busy. I went to San Antonio yesterday and worked a table at a fair for work.

Wasn't that a great NASCAR race today. I am so glad Kyle won. Made my day!.  Glad to see you'll still be number one in the points.

Here is a salsa recipe.    One of my favorite things to make.

Salsa
Ingredients
  • 4 large tomatoes, chopped
  • 1 onion, chopped
  • 1/2 cup chopped fresh cilantro
  • 3 cloves garlic, minced
  • 1 tablespoon lime juice
  • 1 tomatillo, diced (optional)
  • salt to taste
  • 1 jalapeno pepper, minced

Directions

  1. In a medium-size mixing bowl, combine tomatoes, onion, cilantro, garlic, lime juice, tomatillo, and salt to taste. Mix well. Add 1/2 of the jalapeno pepper, and taste. If you desire your salsa with more of a kick, add the remaining 1/2 jalapeno. If you are satisfied with the salsa's heat, do not add the remaining jalapeno pepper. Cover the salsa, and chill until ready to serve. Serves 4

Here is a favorite recipe for Taco Salad.

Taco Salad
1 lg. head lettuce, shredded
1 lb. hamburger cooked and drained
15 oz can Ranch Style Beans, drained, rinsed (pinto beans if you can't find Ranch Style)
1/3 onion finely chopped
1-2 tomatoes, diced
1lb of cheddar cheese, shredded
1 med. pkg. Frito corn chips
1 med. bottle of Catalina salad dressing
Mix all together and serve immediately. (If you need to prepare it ahead of time, don't add Frito's, meat or dressing until ready to serve.)

Saturday 8-6-11

Here is a recipe like my grandmother use to make.  

SOUTHERN FRUIT AMBROSIA


11 oz can mandarin oranges, drained
15 oz can pineapple tidbits, drained
8 oz can fruit cocktail, drained
1.5 cups mini marshmallows
1/2 cup coconut, shredded
1/2 cup walnuts, chopped
1 cup sour cream
Combine ingredients and let set overnight.
 Serves ten.

Here are some pictures of my garden. It has been so hot this year in Texas that most of my garden did not make it.  Only my peppers and okra are producing.   My herb garden did not make it through the heat this summer. Which is a shame it's my favorite and  I love cooking with the fresh herbs.
